Texture has to do with feeling and touching. One can get to know if a soil sample is smooth or coarse by touching.
Testing a soil sample fertility can only be done at the laboratory with equipment, the same goes with testing of soil acidic properties.
Soil permeability involves introduction of liquid to know if the particular soil can retain water or not. It might be stressful as particular soil can retain water or not. It might be stressful as movement to get the liquid may be required unlike checking soil texture by just bending to the ground to prick and feel with the hand
